Ingredients
- 1 can enchilada sauce
- 1 can tomato sauce
- 1 sm can sliced black olives
- 1 med onion, chopped
- 1 lb ground beef
- 1 lb shredded sharp cheddar
- 3/4 cup salsa
- 1 dozen tortillas
- Rice a Roni Spanish Rice
- Refried beans
Preparation
Step 1
Brown ground beef with onion, drain grease and add olives and salsa. In separate pan, heat sauces. Dip tortillas in sauce, fill with meat mixture and cheese. Put in 9 x 13 casserole dish. Top with any extra meat or cheese. Bake at 375 for 30 minutes.
Serve with Rice a Roni Spanish rice and refried beans with melted cheese.
