- 1 tablespoon vegetable oil
- 1 cup diced yellow onion, about 1 medium
- 2 cloves garlic, minced
- 2 – 28 ounce cans of diced tomatoes, drained
- 1/2 tablespoon diced canned chipotle pepper in adobo sauce
- 6 cups chicken or vegetable stock
- 1 1/2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 3 cooked chicken breasts (poached or oven roasted)
- 1/4 cup chopped cilantro (optional)
- Juice of 1 lime
- Toppings:
- Sour cream
- Cheddar cheese
- Tortilla chips

Instructions:
In a large soup pot, heat oil over medium heat; add the onion and sauté until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
Add tomatoes, diced peppers and stock; stir to combine. Stir in cumin, chili powder, and oregano and bring to a boil. Reduce heat and simmer 20 minutes. Add chicken, cilantro, and lime juice. Season with salt and pepper to taste.
Ladle soup into bowls and top with your favorite toppings.
