Ingredients
- 4 cups chicken broth
- 2 cups cooked chicken
- 2 celery ribs, chopped
- 2 medium carrots, chopped
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1/3 cup. uncooked instant rice (white or brown)
- 1/4 cup minced fresh cilantro or parsley
- 1/2 tsp. dried oregano
- 1/2 tsp. salt, optional
- 1/4 tsp ground cumin
- 1/8 to 1/4 tsp crushed red pepper (depending on how hot you like it)

Step 1
1. Cook chicken
2. In large sauce pan combine all ingredients and bring to a boil.
3. reduce heat, cover and simmer for 20-25 min or until rice and vegetables are tender
