Speck Knodel Tyrolean Style

- 1/8 cup of bacon drippings or schmaltz
- 1-1/2 cups flour
- 1 cup milk
- 1 egg
- 1 egg yolk
- 1/4 cup onions
- 1/4 cup fresh chopped parsley
Remove crusts from the bread and then cube it.
Add bread to bacon drippings and let it stand till absorbed.
Mix the flour, milk and eggs.
Add seasoning and pour the mixture over the bread cubes an dlet stand till absorbed.
Flour your hands and knead the dough and shape into dumplings.
Cook in salted water about 15 minutes and drain.
