Whole Wheat Muffins

My mom gave me this recipe, and even my kids beg for more. They make so much, I usually put a dozen in a freezer bag and then grab them out when we want a yummy homemade breakfast without all the work.

Ingredients

  • 1 cup oil
  • 2 eggs
  • 1 teaspoon salt
  • 2 cups brown sugar
  • 2 cups milk
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 4 cups whole wheat flour (ground or store bought will work, just add less if from the store)

Preparation

Step 1

Put whole wheat flour in a large bowl. Mix everything but flour in blender. Pour liquid into bowl with flour and mix well with a spoon. Fill greased muffin tins 2/3 full. Bake for 15-20 minutes, but check after a 13 minutes. The tops will spring back when they are done. Makes 3 dozen. These muffins are also good with stew or soup.
