Waffles with Raspberry Topping

I finally bought myself a waffle maker that actually works! We had this cheap one that made all the waffles soggy, even after 20 minutes! I found this recipe on my friend Kadie's food blog and all my family gave it rave reviews. It is simple to throw together and the waffles are delicious. I had made my favorite raspberry cream pie the day before and had some of the raspberry topping leftover. I think whenever I make the pie, I will reserve a little topping so we can have it on our waffles. It made them out of this world! If you don't have raspberry topping, use your favorite syrup and a little whipped cream. They will still be fabulous.
Ingredients
- 3 beaten eggs
- 3/4 cup oil
- 3 cups milk
- 3 cups flour
- 2 Tablespoons baking powder
- 3 Tablespoons sugar
- 3/4 teaspoon salt
- Vanilla to taste

- Mix all the ingredients together until smooth and cook on a hot waffle iron. Serve with Raspberry topping (recipe below) or your favorite syrup and a dollop of whipped cream.

RASPBERRY TOPPING:
1 1/3 cups sugar
6 Tablespoons cornstarch
1/8 teaspoon salt
1 1/2 cups water (2 cups if using fresh berries)
4 Tablespoons corn syrup
12 oz frozen raspberries thawed, or 1 pint fresh
Mix sugar, cornstarch, and salt. Add 1/2 cup water and stir with wire whisk until smooth. Add remaining water, corn syrup and berries. Cook in saucepan over medium heat until thick. Do not let this boil. It takes awhile for the sauce to thicken, but once it does, it is quick to boil. Watch it closely and stir constantly. Set aside to cool.
This makes a lot, so if you are making it just for waffles, you will have plenty of leftovers.
