Baba au Rhum

Ingredients

  • 1 brioche bun (available in most supermarkets)
  • 6 oz. simple syrup (2 parts sugar, dissolved into 1 part water)
  • 1 lemon peel
  • 1 orange, juiced
  • 1 ea. star anise
  • 1 whole stick of cinnamon
  • 2 oz. rum
  • 1 scoop pistachio gelato

Preparation

Step 1

Add simple syrup, lemon peel, orange juice, star anise and cinnamon into a small pot, and cook over medium-low for 30 minutes. Add rum at the end, remove from heat. Soak brioche in the warm syrup until soggy. Plate brioche in a bowl with a scoop of gelato. Finish with powdered sugar.
