Stuffed Baby Bella Mushrooms

  • 1/2 pound ground sweet italian sausage
  • 1 cup chopped onion
  • 1/2 cup chopped red pepper
  • 2-4 tablespoons chicken broth
  • 2 cups dried stuffing mix, any flavor
  • 8 ounces shredded sharp cheddar cheese
  • 1 teaspoon vegetable oil
  • 3 10-ounce packages baby bella mushrooms, about 40-45, stems removed and cleaned

Step 1

1. Preheat oven to 350. In a large skillet add sausage and cook thoroughly, breaking up any large pieces. Remove to drain. Add onion and peppers and saute until soft. Remove from heat. Return sausage to pan, toss with stuffing mix and 5 ounces cheese. Soften with chicken broth
2. Heat oil in a clean large skillet. Add mushrooms in batches, gill side up, and cook for 2 minutes. Turn and cook for another 2 minutes.
3. Stuff mushrooms with about 1 tablespoon cooled sausage mixture and place on baking sheet. Sprinkle with remaining cheese and cook uncovered for 10 minutes. Serve warm
