Summer Corn, Bacon and Potato Chowder

Ingredients

  • 1 medium uncooked yukon gold potato(es)
  • 1 spray(s) cooking spray
  • 1/2 cup(s) uncooked celery, chopped
  • 1/4 cup(s) uncooked onion(s), chopped (or 1 large shallot)
  • 4 piece(s) corn on the cob, kernels removed with a knife
  • 1 cup(s) sweet red pepper(s), diced
  • 4 oz uncooked Canadian-style bacon, diced
  • 2 cup(s) fat-free skim milk
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 1/8 tsp hot pepper sauce, or to taste

Preparation

Step 1

Pierce potato in several places with a fork; microwave on high power until tender, turning over once, about 8 minutes. Allow to cool; peel and mash.

Meanwhile, coat a large saucepan with cooking spray. Add celery, onion, corn and red pepper; sauté over medium-high heat for 5 minutes.

Stir bacon and milk into saucepan; stir in mashed potato and mix well. Season with salt, pepper and hot pepper sauce; stir to combine. Cover and simmer 10 minutes (do not allow to boil). Yields about 1 1/2 cups per serving.

Yum! This is really good,have to use fresh corn from the cob, that's what make it so yummy!

I used all frozen veggies & used ham instead of canadian bacon since I had it on hand. I didn't have any hot sauce so i used red pepper and it made all the difference in the world and gave it a great flavor.

I doubled the recipe and to increase the serving size I added 1 cup of 99% FF chicken broth per recipe. While the liquid in the soup was runny, it was balanced nicely by all the veggies. Even my boyfriend liked it! But Beware not to eat too much as it may hurt ur tummy from all the veggies

I am in love with corn chowder and was excited to find a WW friendly recipe!

I was a bit skeptical...chowder without cream?? But I was so pleasantly surprised! It was very flavorful and while not as creamy as a calorie-laden version, I was very satisfied and full after the serving size!! It was a hit -- my boyfriend enjoyed multiple bowls! So delicious!

My one tip -- crisp up the bacon before simmering for nice consistency and flavor!

This was delicious! I made the following changes: I used frozen corn and didn't precook and mash the potato, I just diced it and tossed it in the pan. I also used half chicken broth and half milk for added flavor. I doubled the recipe so I would have leftovers for lunch...very glad I did.
