Dried Cranberry Granola with Chocolate Chips

Ingredients

  • 6 tbsp butter
  • 1/4 cup plus 2 tbsp honey
  • 1/3 cup plus 8 tsp packed brown sugar
  • 3 cups QUICK cooking oats (not rolled)
  • 1-1/2 cup crispy rice cereal
  • 2 tsp vanilla extract
  • 1-1/2 tsp cinnamon
  • 3/4 cup raisins
  • 1-1/4 cup dried cranberries (or any other dried fruit you like)
  • 1/4 cup milk chocolate chips
  • 1/3 cup mini chocoate chips

Preparation

Step 1

1. Lightly butter a 9 x 13 pan
2. In bowl, combine, oats, cereal, cinnamon, dried fruit and raisins.
3. In sauce pan over medium high heat, melt butter with honey and brown sugar.
3. Heat till mixture begins to bubble. Lower heat and cook 2 minutes longer.
4. Pour in vanilla and stir.
5. Pour over dry ingredients and mix till well moistened.
6. Add milk chocolate chips and mix well.
7. Press entire mixture into prepared pan and press and pack mixture into pan (be sure to really pack it down)
8. Sprinkle mini chips over top and press down lightly.
9. Cool on counter for atleast 2 hours till chips are set.
10. Cut into bars.

Note: if they are not staying together when cutting, you may not have packed down well enough. Put in fridge 15 minutes then try cutting.
