Cajun Onion Rings

  • 1/3 c. spicy brown mustard
  • 1/8 c. red wine vinegar
  • 1 Tbsp. honey
  • Canola oil
  • 1 large sweet onion, thinly sliced into rings
  • 1 c. buttermilk
  • 1/2 c. all-purpose flour
  • 1/4 , plus 1/8 c. yellow cornmeal
  • 1/2 Tbsp. Cajun seasoning
  • 1/4 tsp. kosher salt



Step 1

Whisk together mustard, vinegar and honey. Refrigerate until ready to serve. Heat canola oil until temp. registers 350. Gently stir together onions and buttermilk, making sure to coat well. Whisk together flour, cornmeal and Cajun seasoning. Dredge onions in flour mixture, shaking off excess. Fry onions for 3 min. or until golden brown. Drain on paper towels. Sprinkle with salt and serve with mustard mixture.
