Ingredients
- 2 tbs olive oil
- 3 garlic cloves, minced
- 1/2 tsp oregano
- 2 tsp salt
- 56 oz stewed tomatoes
- 1 medium onion, diced
- 1/2 tsp basil
- 1/4 tsp thyme
- black pepper
- 6 oz tomato paste

Step 1
Place stewed tomatoes in a blender or food processor, pulse to desired consistency and set aside. In a large pot heat olive oil over medium heat. Add onions and cook for 5 to 8 minutes or until they start becoming soft and translucent. Add garlic and cook for 1 minute. Add seasoning and stir until evenly distributed. Add stewed tomatoes and paste and stir until combined. Reduce heat to low and let simmer 1 hour.
