Tortellini and Spinach Soup

Ingredients
- 1 10 oz package frozen spinach
- 1 teaspoon oil
- 1 medium onion, chopped
- 1 teaspoon chopped garlic
- 2 cups water
- 2 14 1/2 oz. cans chicken broth
- 1 14 oz. can chopped tomatoes
- 1 teaspoon sugar
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 2 cans or 1 package fresh mushrooms
- 1 16 oz. bag frozen tortellini
- 3 tablespoons Parmesan cheese

Preparation
Step 1
Microwave or cook spinach per package directions for spinach.
Saute onion and garlic in oil in dutch oven or soup pan.
Add water and broth and bring to a boil.
Drain spinach, add to pot.
Add tomatoes, mushrooms, sugar, spices.
Cook 10 minutes or so and then add tortellini.
Cook an additional 5 minutes.
Add parmesan cheese when you serve.
