Southwest Turkey Salad

Ingredients

  • Dressing:
  • 2/3 cup. mild salsa
  • 1/2 cup low fat sour cream
  • 1 Tbsp Cumin
  • 3/4 tsp. salt
  • 1/2 tsp. ground black pepper
  • Salad:
  • 1 can (15 oz) Kidney Beans
  • 1 Can (17 oz) Corn Kernels
  • 2 cup cooked turkey, cut into 1/2 inch cubes
  • 3 celery stalks, diced
  • 8 lettuce leaves shredded
  • 2 cup unsalted tortilla chips

Preparation

Step 1

1. in 1 3/4 qt. bowl, combine all dressing ingredients, refrigerate
2. rinse and drain kidney beans in a 1 qt. colander. add corn and rinse well.
3. cut turkey into cubes. combine turkey, celery and beans and corn in a bowl to serve.
4. divide lettuce between 4 plates. top with turkey mixture.
5. garnish with tortillas. serve dressing on side.
