PUMPKIN ROLL

Ingredients

• 1 cup sugar
• 2/3 cup pumpkin
• 1/2 tsp. cinnamon
• 1 tsp. baking soda
• 3/4 cup flour
• 3 eggs
• 8 oz cream cheese
• 1-1/2 tsp. vanilla
• 1 cup 10-x sugar
• 2 tsp. butter

Preparation

Step 1

Mix first 6 ingredients well. Place wax paper on jelly roll and grease. Pour mixture on and bake at 375 for 15 minutes. Sprinkle 10-x sugar on towel and place roll on towel. Remove wax paper and roll up. Let cool.

Mix remaining ingredients together. Unroll towel and remove. Put filling on cake and roll up again. Refrigerate or freeze.
