  • 15 ounce can Salmon - bones and skin removed – reserve liquid (you should end up with approx. 2 cups of salmon)
  • 2 eggs
  • 1/3 cup finely chopped onion
  • 1/4 cup flour
  • 1/4 cup bread crumbs (I use Progresso seasoned)
  • 1 1/2 teaspoons baking powder
  • Parsley to taste
  • Pepper to taste
  • 2 Tablespoons liquid from Salmon



Step 1

Mix together Salmon, eggs, onion and parsley. Stir in flour, bread crumbs and baking powder. Add enough liquid to hold the mixture together. If too wet add more flour. Form into patties. Fry in olive oil on low until golden brown on both sides. Makes about 4 large Salmon Patties.
