Broccoli and Cheddar Cheese Soup

Ingredients

  • 1 onion chopped
  • 2 Tbsp. Italian dressing (reduced fat)
  • 1 can chicken broth
  • 2 broth cans of water
  • 4 cups chopped broccoli
  • 1 cup milk
  • 1/2 cup white instant rice, uncooked
  • 1 cup sharp cheddar cheese

Preparation

Step 1

cook onion in dressing until tender.
add broth, water and broccoli
bring to a boil and cook8-10 min or until broccoli is tender.
Pour into a blender or food processor in batches, cover and blend until smooth.
return to sauce pan and stir in milk and rice
reduce heat and cook 5 min or till heated through and rice is tender.
top each serving with cheese
