Ingredients
- For the Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1/4 teaspoon pure vanilla extract
- For the Chocolate Chip Waffles:
- 2 large eggs
- 1 1/2 cups whole milk
- 1/2 cup unsalted butter, melted, or 1/2 cup canola oil
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups chocolate chips, milk or semisweet, plus more for serving
- Confectioners' sugar for serving
Preparation
Step 1
To make the whipped cream, in the bowl of a stand mixer using the whisk attachment, whip the cream on medium-high speed until soft peaks form, about 3 minutes. Add the granulated sugar and vanilla and whip until firmer peaks form, 1-2 minutes.
To make the waffles, in a medium bowl, whisk together the eggs, milk, butter, and vanilla.
In a large bowl, mix together the flour, sugar, baking powder, and salt. Make a well in the center of the dry ingredients, then pour in the egg mixture. Whisk until mostly smooth, with just a few lumps.
Ladle the batter into the waffle maker, using 1/2-3/4 cup batter per batch. Spread the batter so that it almost reaches the edges of the waffle maker. Quickly sprinkle 3-4 tablespoons chocolate chips over the top, then close the lid. Cook until the waffles are crisp and browned, 3-4 minutes. Wipe the waffle maker clean between batches, in case there are any burned chocolate chips.
Using a spatula, remove the waffles form the waffle maker and serve right away, or place on a baking sheet in a single layer in a 200°F oven for us to 20 minutes before serving. Dust with confectioners' sugar and top with a dollop of whipped cream. Garnish each waffle with a few chocolate chips.
Note: Because these waffles aren't overly sweet, you may wan to use only milk chocolate chips or a mixture of milk chocolate and semisweet chocolate chips.
