Ingredients
- 1/4 cup brown sugar
- 1/2 stick melted butter
- 2/3 cup buttermilk
- or milk with 3/4 teaspoon vinegar
- 2 lightly beaten eggs
- 1/4 cup honey
- zest of 1 orange
- 1 cup flour
- 1 cup unprocessed wheat bran
- 1 Tablespoon baking powder
- optional 1 cup raisins or dried fruit
Preparation
Step 1
Preheat oven to 350 degrees. Lightly grease 12 muffin tins. Pour melted butter over brown sugar and stir until dissolved. Add buttermilk, eggs, honey, and orange zest. In a separate bowl, combine flour, wheat bran, and baking powder. Blend wet ingredients into dry ingredients. Add dried fruit if desired. Fill muffin tins 2/3 full. Bake 20 to 25 minutes, until golden and firm. Cool 5 minutes, then loosen the edges of the muffins using a butter knife, and remove muffins from tins using tongs.
