Ingredients

  • 2 lbs Veal (sliced thin)
  • 2 Lg Eggs
  • 2 Cups Flour
  • 4 Tbsp Butter
  • 4 Tbsp Oil
  • 1 Cup Onions (Diced)
  • 1 1/2 Tbsp Paprika
  • 1/2 Cup Chicken Broth
  • 1 Cup Sour Cream

Step 1

Mix the eggs and dip the veal into the eggs then into the flour to cover well. Set the cutlets on a cookie sheet or large platter.

Put the oil and butter in the frying pan and heat. Cook the cutlets about 3 -5 minutes on each side. Remove the cutlets to a cookie sheet and keep warm in a 200 degree oven.

Add more butter if necessary and add the onions and simmer until tender. Add the paprika and stir until the onions are all coated. Add the chicken broth to the pan and stir rapidly to avoid making any lumps, scraping up any brown bits on the pans bottom.

In a small bowl add 2 Tbsp Flour into the sour cream . Whisking constantly add the mixture to the broth and stir until blended and the sauce thicken a little. Serve over your cutlets.
