Ingredients
- 2 C spinach
- 1 T slivered almonds, toasted
- 1 T dried cranberries
- 1/2 oz (2 T) smoked provolone or smoked mozzarella
- Dijon-Orange Vinaigrette (below)
Preparation
Step 1
1. Divide spinach between 2 plates. Top with almonds, cranberries, and shredded cheese. Serve with Dijon-Orange Vinaigrette.
Dijon-Orange Vinaigrette: In screw top jar, combine 2 t orange juice, 2 t champagne or wine vinegar, 2 t olive oil, 1/4 t Dijon style mustard, and a dash of salt. If desired, add 1/4 t snipped fresh rosemary or 1/8 t dried rosemary, crushed. Cover and shake well.
