Blueberry bread Pudding

  • 2 c fresh or frozen blueberries
  • 1/2 c sugar
  • 1/2 t dried ginger
  • 1/4 c water
  • Pudding
  • 1 1/2 c sugar
  • 4 large eggs
  • 2 c milk
  • 1 t vanilla
  • 1/2 t nutmeg
  • 1 ( 16 0z ) loaf challah or french bread
  • 1 c Blueberries



Step 1

For the sauce, combine berries, sugar, ginger, water in a med saucepan. Bring to a boil over med high heat, reduce heat to low and simmer 3 - 5 min. or til sauce thickens.

For the pudding

Preheat overn 375. LIghtly grease a 13x9 baking pan. In a large bowl beat sugar, eggs at med. spead with electric mixer until fluffy. Add whipping cream, milk, vanilla, and nutmeg. Beat until blended. Fold in bread cubes and berries. Pour into the baking pan, let stand 5 min. Place in oven and bake 40 - 50 min.

Cool in pan 5 min. To serve, top with Berry, Ginger sauce and whipping cream. if desired.

Serves 8 - 10
