Turnip Green Quiche

  • 1 tbsp butter
  • 1 large onion chopped
  • 4-5 garlic cloves, minced
  • 1/4 cup cooked bacon
  • 4 cups cooked turnips, chopped
  • 12 large eggs
  • 1 cup milk
  • 2 cups cheese, grated
  • Pepper
  • Salt
  • 1/4 tsp mustard powder



Step 1

Heat a skillet over medium heat and butter, saute onions and garlic. Stir in pre-cooked meat and turnip greans. Saute until greens are slightly wilted. Allow to cool slightly.

In a large bowl crack eggs and mix in milk, cheese, salt, pepper and mustard powder. Stir in greens mixture. Mix well. Pour into lined muffing tins.

Bake at 350°F for 45 mins or until center is set and edges are golden brown.
