  • 4 cups 2% milk
  • 1 1/3 cups sugar
  • 6 Tbsp cornstarch
  • 4 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 eggs
  • 2 egg yolks
  • 4 Tbsp butter
  • 4-6 large bananas
  • 60 vanilla wafers
  • 1 cup heavy cream
  • 3 Tbsp powdered sugar
  • Non-stick Cooking Spray

Step 1

Spray an 8" glass baking dish with non-stick cooking spray. In a medium sauce pan, whisk together the milk, sugar, cornstarch, salt, eggs, and egg yolks. Once it is well combined, place the pan over medium heat and cook until it is thick and bubbling. Remove the sauce pan from the heat and add the butter and 4 tsp vanilla extract; Whisk until completely melted. Pour the custard through a strainer into a separate bowl and cover with plastic wrap to cool slightly. In the prepared baking dish, place a layer of sliced bananas and then top with a layer of the vanilla water cookies. Pour 1/2 of the custard over the wafers and spread the custard to the edges of the dish. Repeat the layers one more time and then top the second layer with a layer of vanilla wafers. Cover with plastic wrap and chill for at least four hours. Whip the heavy cream with 1/2 tsp vanilla extract and the powdered sugar until it reaches soft peaks. Spread the whipped cream over the chilled pudding. Top the dessert with crushed vanilla wafer cookies and serve!
