Waffles: Oatmeal Waffles with Brown Sugar and Bananas

There is a satisfying wholesomeness to these waffles, which are made of rolled oats and whole-wheat flour. Chunks of banana and a sprinkle of brown sugar make them great as a snack, even without maple syrup.

Ingredients

  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup unsalted butter, melted, or 1/2 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 3/4 cup rolled oats
  • 3 tablespoons firmly packed golden brown sugar, plus 2-3 tablespoons brown sugar for sprinkling
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large ripe banana, chopped in 1/4-inch dice
  • Warm maple syrup for serving

Preparation

Step 1

Preheat a waffle maker.

In a medium bowl, whisk together the eggs, milk, butter, and vanilla.

In a large bowl, combine the all-purpose flour, whole-wheat flour, oats, 3 tablespoons brown sugar, baking powder, cinnamon, and salt. Make a well in the center of the dry ingredients, then pour in the egg mixture. Whisk until mostly smooth, with just a few lumps. Gently fold in three-fourths of the bananas.

Ladle the batter into the waffle maker , using 1/2-3/4 cup batter per batch. Spread the batter so that it almost reaches the edges of the waffle maker. Sprinkle each waffle with about 1 teaspoon of brown sugar, then top with 1 or 3 pieces of banana. Cook until the waffles are crisp and browned, 3-4 minutes. Spray the waffle maker with nonstick spay between batches.

Using a spatula, remove the waffles from the waffle maker and serve right away, or place on a baking sheet in a single layer in a 200°F oven for up to 20 minutes before serving. Serve, banana side up, drizzled with maple syrup.
