Ingredients
- 6 small potatoes, sliced thin
- 1/2 onion, diced
- 6-8 oz smoked ham, cut bite sized
- 12 eggs
- salt and pepper to taste
- oil
Preparation
Step 1
1. Preheat oven to 325
2. Saute potatoes and onions in oil until soft, not brown
3. Butter a 7 1/2 x 11 3/4 glass baking dish.
4. Layer potatoes, onions, and ham in dish.
5. Stir eggs with salt and pepper to taste and pour over top.
6. Bake for 20-25 min or til eggs are set.
