Upside Down Pineapple Cake

Ingredients

  • 3 T butter
  • 2 1/2 c pineapple
  • 2/3 c brown sugar
  • 1/3 c shortening
  • 1/2 c sugar
  • 1 egg
  • 1 t vanilla
  • 1 1/4 c sifted flour
  • 1 1/2 t baking powder
  • 1/2 t soda

Preparation

Step 1

Topping: melt butt in 9 x 1 1/2" round pan. Drain pineapple, reserving 1/2 c syrup. Cover with brown sugar then pineapple.
Cake: Cream together shortening & sugar, add egg and vanilla. Beat fluffy. Sift together dry ingred; add alternately with reserved syrup, beating well after each add. Spread over pineapple. Bake mod oven (350*) 45-50 min. Let stand 5 min invert on plate. Serve warm,.
