Penne with Sausage

  • 6 oz whole wheat penne, uncooked
  • cooking spray
  • 8 oz sweet Italian turkey sausage, cut into 1/2" slices
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can no salt added tomatoes, undrained, chopped
  • 1 small onion, skinned, halved, then sliced
  • 1/2 c kale, cut into ribbons
  • 1/2 t black pepper
  • 1/8 t ground caraway seed
  • 1/4 c grated Parmesan cheese

Step 1

cook pasta. spray large skillet with cooking spray and heat. add sausage and cook until done. remove sausage and clean pan. spray pan and add onions. cook 2-3 minutes, then add garlic. cook 1 minute more, then add sausage and tomatoes with juice, and ground caraway seed. simmer until most of liquid is evaporated, add kale ribbons, black pepper, and cooked penne. stir through well until pasta is well coated with sauce, another minute or two. serve in a large pasta bowl with grated cheese.

4 servings, 1/2 c pasta & 1 T cheese each; about 6 points under old system
