Caramel Sauce, Basic Recipe

Ingredients

  • Yield: approximately 3/4 cup
  • 1/2 cup sugar
  • 2 tablespoons water
  • 1 tablespoon light corn syrup
  • 1 tablespoon cold unsalted butter
  • 1/8 teaspoon salt
  • 1/2 cup heavy whipping cream

Preparation

Step 1

1. In a medium heavy saucepan, sprinkle sugar in an even layer. In a small bowl, stir together 2 tablespoons water and corn syrup until combined. Pour over sugar, stirring just until moistened. Cook, without stirring, over medium-high heat until golden brown. Remove from heat. Add butter and salt, whisking until butter melts.
2 . In a microwave-safe bowl, place cream. Microwave until hot but not boiling, approximately 30 seconds. Whisk into caramel. (Mixture will foam.) Cook, stirring constantly, over low heat until smooth, approximately 1 minute. Remove from heat.
3 . Pour into a bowl Let cool 10 minutes, stirring occasionally, Serve warm or chilled. Cover, and refrigerate up to 1 week.
