TIPS: Use an ice cream scoop or large ladel to get chocoalte; then dip balls.
Peanut butter balls will soften quickly. If working alone, only take a few out of hte freezer at a time to dip.

Ingredients

  • 1 1/2-2 cups peanut butter
  • 4 cups confectioners' sugar
  • 1 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 4 cups semisweet chocolate chips

Preparation

Step 1

Blend first 4 ingredients. Dough will look dry. Roll into 1 inch balls and place on a wax paper lined cookie sheet. Poke a toothpick into th etop of each ball (to be used as a handle for dipping). And chill in freezer utnil hard. (1/2 hour or overnight).
Melt chocolate chips slowly in microwave on low setting.
Dip frozen peanut butter balls in melted chocolate holding onto toothpick. Leave a small portion of the peanut butter showing at the top to make them look like Buckeyes.
Put back on the wax paper lined cookie sheet and refirgerate for 2 hours.
