Ingredients

  • 2 c. white flour
  • 2 tsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 can (15 oz.) pumpkin
  • 1/2 c. white sugar
  • 1/2 c. packed brown sugar
  • 1/2 c. evaporated milk (can be fat-free)
  • 1 lrg. egg, 1 lrg. egg white
  • 1 TBSP. veg. oil
  • 1/4 c. chopped nuts

Step 1

Heat oven to 350. Grease 9x5 loaf pan.

Combine flour pumpkin spice, bak. pow.,salt and bak. soda in medium bowl. Blend pumpkin, white sugar, br. sugar, evap. milk, egg, egg white, and oil in large mixer bowl. Add flour mixture. Mix JUST until moistened. Pour into loaf pan. Sprinkle with nuts.

Bake 60 - 65 mins. Cool in pan for 10 mins. Remove to wire rack.
