Salmon & Scallion Kebabs

As simple as they seem, these kebabs are sensational. Scallions go from a supporting role to center stage, adding bite to flaky salmon (which cooks very quickly on the grill!).

Ingredients
- 1/2 pound(s) skinless salmon fillet, cut into 1 1/2-in. pieces
- 2 bunch(es) scallions (white and light green parts only), cut into 1 1/2-in. pieces
- 2 tablespoon(s) olive oil
- Kosher salt and pepper
Preparation
Step 1
Heat grill to medium-high. In a large bowl, toss the salmon, scallions, oil and 1/2 tsp each salt and pepper and thread onto skewers.
Grill, turning occasionally, until the salmon is opaque throughout, 4 to 6 minutes.
