Shrimp - BBQ Bacon Wrapped

  • 16 lg shrimp, peeled & deveined
  • 8 slices bacon
  • BBQ seasoning, to taste

Step 1

Preheat oven 450. Wrap shrimp with 1/2 slice of bacon, securing with toothpick. Be sure to use lg shrimp since the cooking for shrimp & bacon is similar. If using med sized shrimp, you might want to precook the bacon a little. Over cooked shrimp are tough & rubbery & not what you want to serve.

Line jelly roll Pam with extra heavy duty foil & place baking rack in pan. Place shrimp on rack & sprinkle with BBQ seasoning, turn & sprinkle second side. Let shrimp sit for 15 min. Bacon will turn from creamy white to a little opaquen&'seasonings will soak in.

Cook bacon 10-15 min. The rack keeps shrimp from sitting in the drained bacon fat. With a little luck, you won't tear the foil. You can then through that away &'only have to scrub the rack.
