Ingredients
- 1 il pork tenderloin
- salt and pepper
- 1 T EVOO
- 3 7 oz pkg froz yellow carrote, spinach, and white bean medley in garlic herb sauce, thawed
- 1 4.5 oz can green chilis
- 1 t cumin
- fresh cilantro
- lime wedges

Preparation
Step 1
Cut pork in 3/4 inch pieces, sprinkle with s 7 p. In dutch oven, heat oil. Add pork, cook 4-5 minutes. Stir in two packages of veggies, cumin, and chilis.
In a blender, combine remaining vegges and i c of water. Process till smooth. Add pureed veggies to Dutch Oven. Bring to a simmer. Cook uncovered for about 15 mins. Serve with cilantro and lime wedges.
