Chipotle-Rubbed Flank Steak

Ready in 25 minutes and coming in at less than 300 calories, this spicy steak with Gorgonzola cheese sauce is a flavorful and filling meal.
Ingredients
- 1 teaspoon ground chipotle chile pepper
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1 (1-pound) flank steak, trimmed
- 1 teaspoon olive oil
- 2 tablespoons finely chopped shallots
- 1 garlic clove, finely chopped
- 1 teaspoon all-purpose flour
- 2/3 cup milk
- 1/4 cup (1 ounce) crumbled Gorgonzola cheese
- 1 teaspoon butter
- 2 teaspoons chopped fresh flat-leaf parsley
Preparation
Step 1
1. Preheat broiler to high.
2. Combine first 3 ingredients. Sprinkle steak with chipotle mixture. Place on a broiler pan; broil 5 minutes on each side. Let stand 5 minutes. Cut thinly across grain.
3. Heat oil in a saucepan over medium heat. Add shallots and garlic; cook 1 minute. Add flour; cook 30 seconds, stirring. Add milk; boil. Cook until reduced by half. Remove from heat; stir in cheese and remaining ingredients.

Delicious! The strong cheese was a perfect match with the spicy steak. So easy to make too! My boyfriend requested this meal once a week. Paired with some sauteed asparagus.
Oh man, that cheese sauce was amazing! Perfectly balanced the spice of the steak. The side dishes were both great and made a nice, well-rounded meal. 6 oz of spinach didn't seem like much for two people, let alone four.
LOVED how this turned out with grass-fed flank steak. For the first side I think I had it too close to the broiler, so I moved it down a level for the second side. It turned out really well, but I am glad I'd lowered it because it probably would have been too done otherwise. I didn't make the sauce, as it didn't sound like something our family would like.
This was delicious. The blue cheese sauce was the perfect offset to the spicy chipotle rub. I made it as written except that I used rocquefort instead of gorgonzola and almond milk instead of milk. I will be adding this to my standard rotation.
We love flank steak and this was VERY GOOD! We grilled the spice rubbed flank steak for about 6 min per side for Medium rare. I only had Maytag blue on hand, so used that with half skim/half soy milk. Would definitely serve company!!
We added a little olive oil and lime juice to the rub and marinated the steak over night, because I have never had much luck with flank stead without marinating it first. It turned out delicious. I thought rub would make it too spicy, but it was perfect. Also, i admit to being a cheese freak and gogonzola is one of my favorites, but omg - that sauce was delish. I would eat it on almost anything :) Didn't have the whole menu, so we made mashed potatoes and steamed boccoli.
Okay, I LOVE cooking light and all of its recipes and am usually pretty good at putting them together, but my husband compared this to a "just married and trying to learn how to cook" meal. I used the recipe from the magazine, so it had the spinach and couscous recipes with it as well. The steak was WAY too spicy, the spinach was not nearly enough for 4 people (and I used 9 oz rather than the 6 the recipe calls for), and the couscous had WAY too much liquid in it. It was more the consistency of mashed potatoes (I didn't even know that was possible). I love couscous, and I couldn't even eat it - it all got thrown out! I say the recipe has potential because I could tweak all of it to make it better, but if you are making this for the first time, beware.
I could not mop up enough of the sauce between the delicious steak and couscous. This one was a winner I look forward to serving again! Just follow the recipe and you'll be golden.

This is REALLY good. I would almost put a little more chipotle on my steak next time, but the sauce is amazing and goes on everything from meat to veggies.
My first time cooking steak and it was a bit more red than we prefer. After slicing, I threw it back in the broiler for another 5 minutes just to brown it a bit more. (It was medium rare, I took it to medium well) I'd definitely make it again, VERY easy for an amateur like me!
The flavor is wonderful! And the left-overs from tonight will make a fantastic sandwich tomorrow.
Loved the sauce, but I used blue cheese as I didn't have gorgonzola on hand. Grilled the steak on our grille. Was a little nervous about the chipotle being too spicy for DD so only used half. Next time, will use the full amount as it wasn't spicy at all. Served with garlic couscous and steamed spinach. Would definitely make this again.
Serve with Green Beans with Almonds and wild rice.
