Salmon, Asian Grilled or Roasted

Ingredients
- 1 side fresh salmon boned but skin on (about 3 lbs) (black pearl if possible)
- 2 tbsp dijon mustard
- 3 tbsp good soy sauce
- 6 tbsp good olive oil
- 1/2 tsp minced garlic

Step 1
Preheat oven to 350 F.
Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl.
Cut salmon side in half and place each half in a zip lock bag with 1/2 of the marinade for 10 minutes. Alternately, place salmon skin side down on a baking sheet and drizzle the marinade on the salmon and let sit for 10 minutes.
After 10 minutes discard the marinade and gently wipe the remaining marinade off the fillet(s) with your hand. Place skin side down on a lightly oiled baking sheet.
Put in oven on rack about 3/4 of the way to the top. Bake for approximately 10 minutes or until salmon seems slightly firm on top. Time varies depending on thickness of salmon. Do not let it burn or cook all the way through. The salmon will be slightly raw in the middle (pepto pink) but don' worry it will continue to cook as it sits.
Allow the fish to rest for 10 minutes covered lightly with a piece of foil.
Remove to a platter and serve at room temperature or chilled.
