Dinosaur Slaw

Ingredients

  • 6-8 large kale leaves
  • 1/2 cup olive oil
  • 2 large cloves garlic, minced
  • 4 Tbsp sherry vinegar
  • 1 1/2 tsp kosher salt
  • 1 1/3 cups freshly grated Parmesan

Preparation

Step 1

Strip off the kale's leaves and slice into thin slivers. Place into a large bowl.

In a small saucepan, heat the oil over medium heat and sauté the garlic, stirring frequently until just on the verge of browning, about 2 minutes. Add the salt and sherry vinegar and stir while the vinegar sizzles furiously and becomes fragrant, about 45 seconds.

Pour the dressing over the kale and toss. Stir in the Parmesan and salt to taste. Serve with extra cheese sprinkled on top.
