Louisiana-Style Hot Skillet Fried Chicken

Ingredients

  • Kosher salt, about 2 tablespoons
  • Black pepper, about 2 tablespoons
  • 1 tablespoon cayenne pepper, a palmful
  • 1 tablespoon poultry seasoning, a palmful
  • 1 1/2 teaspoons granulated garlic or powder, half a palmful
  • 1 1/2 teaspoons granulated onion, half a palmful
  • 1 teaspoon ground cumin, 1/3 palmful
  • 1 large, whole bone in, skin on, chicken breast, quartered
  • 2 bone-in, skin on chicken thighs
  • 2 bone-in, skin on chicken legs
  • Frying oil, such as peanut or canola
  • 1 cup buttermilk
  • 1 large egg
  • Frank’s Red Hot, about 1 teaspoon plus some to pass at table
  • 3 About 3 cups flour
  • 1 round tablespoon cornstarch
  • 1 teaspoon baking powder
  • Honey, for drizzling

Preparation

Step 1

Combine salt, pepper and dry spices. Sprinkle half the mix over chicken pieces then cover and chill overnight or several hours. Bring back to room temp to cook.
Step

Heat an inch of oil in large cast-iron skillet over medium to medium-high heat to 350°F.

Whisk buttermilk with egg. Season with hot sauce, salt and pepper.
Step

Pour flour into a shallow dish and mix with remaining spice blend, cornstarch, and baking powder.
Step

Coat 4 pieces in buttermilk dressing then flour mix and fry 12 minutes, turning occasionally. Drain on a wire rack arranged over baking sheet while you fry second batch. Serve with hot sauce and honey for topping.

Most of you are really a bunch of wimps...Spicy is good for you,but I do agree with delores.. the honey and pickle relish really seem out of place in this recipe . Do all Texans like such bland stuff? Chicken and mashed potatos...How boring ; I guess I got spoiled when I spent three years in DC.within a community of different cultures whose cuisine was awesome!

Made the chicken tonight it was wonderful. Living in Texas we have mashed potatoes and gravy with our chicken. Decided that as my family had a light sheen of sweat that maybe I should have used fresh flour and spices, minus the cayenne, for the roue to make the gravy.

Seems Delicious..It is AMAZING that so many MEN are such wimps and don't like Rachael's recipe.I cannot wait to try it myself..minus the honey.I Love Hot too.'Can hardly wait to eat this!!!

One cooking show suggests putting the handle of a wooden spoon into the oil and if bubbles appear around it, it's hot enough. Another way is to drop a drop of water and if it splatters back, it's ready. But you can burn yourself that way when it splatters back.

Can you make something similar to this, but without the spice? I love spicy foods but my husband does not.

What about the paprika? On the show, you said 1T of sweet paprika, but is not in the list of ingredients here.
