Holly "B"s Oat Bread

Ingredients

  • 2 cups warm water
  • 2 T honey
  • 1 pkg (2-1/4 t) quick rise yeast
  • 2 T mild-tasting oil
  • 4 cups flour
  • 2 cups old fashioned oats
  • 3 T milk powder
  • 1-3/4 t salt

Preparation

Step 1

Swish together the water, honey, yeast and oil in a roomy bread bowl. Now dump in the flour, milk powder and salt. Mix dry ingredients gently with your fingertips without breaking through to the liquid below.
Mix dough with large wooden spoon until too stiff to continue. Coat hands with flour and turn out on lightly floured countertop. Add a little additional flour if too sticky. Knead until smooth; 2-5 minutes of kneading should be fine. Dust the ball with a little flour and place in lightly oiled bread bowl. Cover with dishtowel or plastic grocery sack and let rise in warm location until doubled in size.
Butter two 4x8" loaf pans.Punch down the dough and turn out of the bowl onto a lightly floured work surface. Divide the dough in half and form into 2 loaves. Gently dip the top of each loaf in water and then oats before placing in buttered pans. Let rise until loaves show 1-2" above the rims. Before the bread finishes rising, preheat oven to 375 degrees with the rack in the middle position.
Bake the loaves 30-35 min., rotating pans halfway through baking. (Check for doneness by turning a loaf out of the pan and thumping the bottom. You should hear a hollow thump and the color should be a golden brown). Remove from pans and cool on rack.
