Almond Sugar Cake

This classic butter cakeis topped with a caramel and almond frosting that is broiled onto the cake after it is baked. The name for this cake, Tosca, is in the Swedish tradition of naming cakes after literary figures or operas.

Ingredients
- ALMOND TOPPING:
- 4 eggs
- 1 1/4 cups sugar
- 3/4 cup butter, melted and cooled
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 cup milk
- 1 teaspoon vanilla
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup heavy cream
- 1 cup slivered or sliced almonds
Preparation
Step 1
Preheat the oven to 350 degrees. Butter a 9- by 13-inch cake pan.
In a large mixing bowl, beat the eggs and sugar until light and lemon-colored. Fold in the melted butter. In a separate bowl, combine the flour and baking powder. Fold the dry ingredients into the egg mixture. Blend in the milk and vanilla. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
Meanwhile, to prepare the topping, in a saucepan, combine the butter, sugar and cream. Cook over low heat, stirring constantly, until the mixture comes to a boil.
Remove the cake from the oven and pour the topping over it immediately, smoothing it evenly. Sprinkle with the almonds.
Turn the broiler on and place the cake on the lowest rack away from the heat. Broil until the topping is bubbly and the almonds are lightly browned. Remove from the oven and cool. Cut into squares to serve.
