(Not So) Humble Pie

Ingredients

  • Crust:
  • 2 cups finely crushed pretzel crumbs
  • 1/4 cup packed brown sugar
  • 3/4 cup butter, melted
  • Pie:
  • 6 oz cream cheese, softened
  • 2 1/2 cups creamy peanut butter
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla
  • 1 3/4 cup heavy cream, COLD
  • 4 oz good quality semi sweet chocolate, roughly chopped

Preparation

Step 1

•Preheat oven to 350.

•In a medium bowl, combine pretzel crumbs, brown sugar, and melted butter. Press into a lightly greased 9 inch pie pan. Bake for about 10 minutes, until lightly browned. Let cool completely before filling.

•To make filling: Place a metal mixing bowl with your mixer's whisk attachment in the freezer.

•In a large bowl, beat cream cheese, peanut butter, sugar and vanilla with a handheld mixer until smooth. Add cold cream to the chilled mixing bowl and beat with the chilled whisk attachment until stiff peaks form. Carefully fold the whipped cream into the peanut butter mixture in 3 addition, until it's thoroughly combined and there are no streaks. Fold in chocolate pieces.

•Spoon filling into crust, forming a dome in the center. Chill uncovered for an hour. Cover with plastic wrap and chill for at least another hour before serving.
