Ingredients

  • 1/8 tsp black pepper
  • 1/4 tsp salt
  • 1/4 flour
  • 4 chicken breasts, cut in half
  • 1 tbsp olive oil
  • 1/2 cup marsala wine
  • 1/2 cup chicken stock, fat skimmer off the top
  • 1/2 lemon, juice only
  • 1/2 cup mushrooms
  • 1 tbsp fresh parsley, chopped

Preparation

Step 1

- Mix salt, pepper, and flour together and then coat the chicken breasts with the mixture.
- In a skillet heat oil and brown the chicken, about 2 minutes per side.
- Remove chicken from the pan and add wine, lemon juice, and stock to deglaze the pan.
- Once the wine has been heated add the mushrooms and chicken and simmer covered for about 10 minutes, turning the chicken once.
