Irish Apple Cake

Ingredients

  • 1 cup honey
  • 1/2 cup Irish whisky or dark rum
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon cinnamon
  • 2 1/2 cups bread crumbs
  • 4 apples, peeled, cored, thinly sliced
  • 1/4 cup golden raisins
  • whipped cream

Preparation

Step 1

Preheat oven to 350 degrees. Using vegetable oil, grease the bottom of an 8" square baking pan. Combine honey, whisky, cloves, and cinnamon. Sprinkle raisins in bottom of baking dish. Scatter 1 1/2 cups of the bread crumbs over the raisins. Arrange 1/4 of the apple slices atop the bread crumbs. Drizzle with 1/4 of the honey mixture. Add 1/2 cup of bread crumbs. Repeat layering, ending with breadcrumbs. Cover with waxed paper laid on top of the batter, place a 2 pound weight on top, and chill overnight. Bake for one hour. Remove dish from oven, let stand 5 minutes, then invert onto a plate. Garnish with whipped cream.
