Ingredients
- 3 cups fresh peaches,
- peeled, and sliced
- 1 3/4 cup plus 2 Tablespoons sugar
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup shortening
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped pecans
Preparation
Step 1
Preheat oven to 325 degrees. Grease and flour 2 glass loaf dishes. In blender, lightly puree the sliced peaches with 6 Tablespoons of sugar. The goal is for the peach mixture to approximate 2 1/4 cups. Combine dry ingredients and set aside. Cream shortening with the rest of the sugar. Add eggs and vanilla. Blend in peach puree. Mix in dry ingredients. Add nuts. Spoon into prepared loaf dishes. Bake about 1 hour, until toothpick inserted in center comes out with bread-like crumbs. Do not overbake ! Cool 10 minutes and serve warm.
