Santa Fe Soup

Ingredients

  • 2 lbs. hamburger
  • 1 lg onion chopped
  • 2 (1 oz) pks dry ranch dressing mis
  • 2 (1.25 oz) taco seasoning mix
  • 2 (11 oz) cans white shoepeg corn, drained
  • 2 cups water
  • 1 (16 oz) can black beans, undrained
  • 1 (16 oz) can pinto beans, undrained
  • 1 (16 oz) can kidney beans, undrained
  • 1 can diced tomatoes, undrained
  • 1 can Rotel tomatoes

Preparation

Step 1

In a Dutch oven, cook hamburger and onion til meat is browned and onion tender; drain. Add remaining ingredients, blending well. Bring to a boil. Reduce heat, cover and simmer 2 hours.

Serve with grated cheese, sour cream and fritoes or cornbread.
