MARINATED ASIAN STEAK WITH CUCUMBER & NAPA CABBAGE SALAD

Ingredients

  • 1/4 cup Lime Juice, 2 limes
  • 1/4 cup Rice Vinegar
  • 2 Tbsp Vegetable Oil
  • 1 Tbsp Toasted Sesame Oil
  • 1/2 tsp Red Pepper Flakes
  • 1 clove Garlic, crushed
  • 1 lb Flank Steak
  • 1/4 cup Soy Sauce
  • 1/2 head Napa Cabbage, thinly sliced
  • 1 Cucumber, cut in half and sliced
  • 1/2 cup Toasted Peanuts, coarsely chopped

Step 1

n a small bowl, combine lime juice, vinegar, vegetable oil, sesame oil, red pepper flakes and garlic. Reserve half of mixture for salad dressing and refrigerate. Pierce steak all over with a fork. Pour remaining lime juice mixture into a resealable bag and add soy sauce. Add flank steak and marinate 1-2 hours, or overnight. When ready to prepare, drain meat (discarding marinade). Heat broiler with rack set 4" from heat. Line baking sheet with foil. Place steak on baking pan. Broil without turning 8 minutes for medium rare, or desired doneness. Or grill on outside BBQ. Remove and let rest 5 minutes. Meanwhile, combine cabbage and cucumber and toss with reserved dressing. Divide among 4 plates. Thinly slice steak on the diagonal, across grain. Top salad with steak and peanuts.
