Ingredients
- 1 1/2 cups crushed graham crackers
- 1/4 cup sugar
- 6 Tablespoons melted butter
- 8 oz soft creamcheese
- 1/2 cup sugar
- 1 Tablespoon lemon juice
- 1/4 teaspoon vanilla
- dash of salt
- 2 eggs
- 1 cup sour cream
- 2 Tablespoons sugar
- 1/4 teaspoon vanilla
- ( optional ) canned fruit
- or pie filling
Preparation
Step 1
Preheat oven to 325 degrees. Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9" pie plate. Combine cream cheese, sugar, lemon juice, vanilla, and salt. Add the eggs, one at a time. Place the pie pan on a baking sheet. Pour the cream cheese mixture into the crust. Bake 25-30 minutes, until a knife inserted in the center comes out clean. Topping : combine sour cream, sugar, and vanilla. Spread over pie. Bake another 10 minutes. Chill for at least 3 hours. May be topped with fruit or canned pie filling.
