Ingredients

  • Filling:
  • 1 heaping cup of sliced apples
  • 1/3 c. sugar
  • 1/4 tsp cinnamon
  • Small pinch grated nutmeg
  • 2 T cornstarch
  • 2 tsp water
  • PLUS
  • 1/2 c brown sugar
  • 1/2 tsp cinnamon
  • Cake:
  • 1/3 c butter
  • 3/4 c. sugar
  • 1/2 c. applesauce
  • 1 tsp vanilla
  • 2 eggs
  • 2-1/4 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 c greek yogurt or plain yogurt or sour cream
  • Glaze:
  • 2 c. powdered sugar
  • 1 tsp vanilla
  • 6 T milk

Preparation

Step 1

Filling
Make filling by combining apples, sugar, water cinnamon and cornstarch in a small saucepan. Cook on low heat for 5-7 minutes, stirring constantly until sauce is thickened and apples are semi-soft. Set aside to cool. In small bowl, mix brown sugar and cinnamon are combined. Set aside.

Cake
Preheat oven to 350 and grease and flour a 9x13 pan. Set aside. Cream butter and sugar until light and fluffy.. Add applesauce and vanilla and combine. Add eggs, beating well after each. Sift dry ingredients together. Add dry to batter in three parts, alternating with the yogurt in two parts, beginning and ending with the dry ingredients. Beat until just combined. Spoon half of the batter into prepared pan. Spoon cooled apple mixture over batter carefully and spread evenly. Sprinkle 2/3 of brown sugar/cinnamon mix over apples and cover with remaining batter. Sprinkle remaining brown sugar mix over top. Bake 45-55 minutes until toothpick comes out clean.

Glaze
While cake is baking, make the glaze. In a bowl, mix the powdered sugar, vanilla and milk until glaze is desired consistency. When cake comes out, immediately pour onto hot cake. Pour as evenly as possible. Let cake set.
