Ingredients
- 6 oranges with near perfect skins
- 3 1/4 cups sugar
- 2 teaspoons ground ginger

Cut oranges in half. Scrape out pulp and membranes, leaving white skin on peel. Cut peel into strips 1/4" to 1/2" wide. Blanch strips in boiling water for 5 minutes. Drain and repeat 3 times, using fresh water each time. Cook 2 1/2 cups of the sugar in 1 1/4 cups boiling water until the mixture is the consistency of a light syrup. Add the ground ginger and the strips. Simmer gently, partially covered, for 40 minutes or until peels are tender. Place peels in a single layer on waxed paper. Cool slightly and dredge with sugar. Dry in a warm place overnight. Store in an airtight container. Makes about 1 1/2 pounds of candied peels.
