Swedish Apple Cake

Scandinavians are masters at making wonderful desserts with apples. This is my version of a buttery, almond-topped cake that I enjoyed at a beautiful roadside coffee-stop in Sweden.

Ingredients

  • 1 tablespoon fine dry bread crumbs
  • 4 eggs
  • 1 1/4 cups sugar
  • 1 cup butter, melted
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 3 apples, pared and cut into 12 wedges
  • 1/3 cup slivered or sliced almonds

Preparation

Step 1

Preheat the oven to 350 degrees. Butter a 10-inch springform pan or a 10-inch cast-iron skillet and sprinkle with the bread crumbs.

In a large mixing bowl, beat the eggs and 1 cup of the sugar until thick and lemon-colored. Add the butter.

In a separate bowl, combine the flour and baking powder, then add to the butter mixture. Pour the batter into the prepared pan or skillet.

In a medium-sized bowl, combine the remaining 1/4 cup sugar and the cinnamon. Toss the apples in the cinnamon-sugar mixture, until all the apples are well-coated. Press the apples into the top of the cake batter in a spiral pattern. Sprinkle with the almonds.

Bake for 1 hour or until a skewer inserted into the center of the cake comes out clean.

Serve hot or at room temperature.
